1 coffee bean (optional)
1 tsp vodka (optional)

Iced Berries with White Chocolate Sauce

Simplicity itself but highly pleasurable, this seems too naughty for words but isn’t that high in calories. The contrast between the cold, frosty berries and the hot creamy sauce is beyond delicious and will satisfy your chocolate cravings.

Pick over the berries and discard any damaged ones. Hull the strawberries, if using. Spread the berries out on a baking tray and put them in the freezer for 20 minutes – the berries won’t freeze in this time, but they will frost nicely.

Just before you take the berries out of the freezer, make the sauce. Break the chocolate into a saucepan and pour over the cream. Add the coffee bean if you have one – it won’t add a coffee flavour but it will add depth to the white chocolate. Pour in the vodka, if using.

Heat the sauce over a gently heat, stirring constantly. When the chocolate has melted, whisk the sauce vigorously for a minute or so.

Remove the berries from the freezer and put them in glass bowls, handling them as little as possible. Pour over the hot sauce and serve right away.
