Ingredients:
4 medium courgettes
300g minced lamb
1 small onion, grated
1 tomato, diced
10g mint, chopped
1 tsp ground cumin
½ tsp ground cinnamon
½ tsp dried chilli flakes
10g pine nuts
2 tbsp olive oil
salt and freshly ground black pepper

For the mint yoghurt
6 tbsp yoghurt
1 small tomato, finely chopped
10g mint, finely chopped
salt and freshly ground black pepper

Courgettes Stuffed with Spiced Lamb

SERVES: 4

Don’t be put off by the thought of stuffing the courgettes, it’s incredibly easy to scoop out the seeds and spoon in the stuffing.

Preheat the oven to 180°C/350˚F/Gas 4.

Slice the courgettes in half lengthways and scoop out the seeds.

Mix the lamb, onion, tomato, mint, spices and pine nuts together in a bowl. Season very well – the lamb will take about 1½ teaspoons of salt.

Spoon the lamb mixture into the prepared courgettes and fit them snugly into a large baking dish. Pour over the oil.

Bake for 40 minutes or until the lamb is browned on top and the courgettes are soft.

To prepare the mint yoghurt, in a bowl, mix together the yoghurt, tomato and mint and season well.

Serve the stuffed courgettes with the mint yoghurt spooned over the top or on the side.
