To celebrate the publication of the seminal cookbook on Korean cuisine, Our Korean Kitchen authors Jordan Bourke and Rejina Pyo treated press (and some lucky Orion staff!) to a traditional celebratory feast. Sitting in the airy, relaxed dining tables at Jamie Oliver’s Recipease in Notting Hill, we were spoilt for choice as dishes large and small appeared before our eyes. Using recipes from their new book, husband and wife Jordan and Rejina cooked up a storm.
For starters they served delicious tofu and soybean soup with kimchi pancakes. Both were incredible and a marvelous introduction to Korean food, particularly the kimchi element which is perhaps the most well-known Korean dish. We then moved on to the mains: sesame and soy-marinated beef, glass noodles with vegetables, seasoned lotus root, dried seasoned anchovies, spicy dried squid and rice. Jina explained to us how to eat these – using a lettuce leaf as a wrap, we lined it with rice and then layered it up with all the components before devouring. It was excellent, with clean plates all round. The beauty of Korean cuisine is that so many dishes can be made in advance and can be stored in the fridge for weeks and months, making it the perfect thing to serve when you’re busy during the week, or to a larger group.
For pudding, there was the most wonderful shaved ice and sweet red bean ice cream and pecan and cinnamon-stuffed pancakes – it was phenomenal. The ice cream came served in a big bowl from which we helped ourselves after a person at each table was nominated the honour of mixing it together. Red beans in a dessert may sound a bit out there but it was one of the tastiest sweet treats I’ve ever had.
In addition to being a food writer and chef, Jordan is also a food stylist so between that and Jina being a fashion designer, the food looked beautiful. Rejina introduced Jordan to her native cuisine and he has never looked back. We at Orion are also converts to this spectacular cuisine – here’s to the biggest and best food trend of the moment (we can see why it’s so popular!).
