If you’re short on time and ingredients but still fancy something healthy and delicious, this recipe for Roasted tomatoes and avocado on toast is the ideal choice. This is a great vegetarian recipe but if you want to, topping with smoked salmon is the perfect addition.

For a zesty but quick mid-week meal, try Chicken and cashew curry with coconut lime noodles. The cashews add a satisfying crunch while lime gives the dish tanginess.

For something sweet, the Raspberry and white chocolate macaroons look a picture and will keep in an airtight container for up to 12 hours, so are the perfect little treats to make ahead (Main pic, above).
