Have a soup-er new year!
We all know that souping is the new juicing, and for good reason. Soup is restorative, nutritious and keeps us feeling fuller for longer. Here are a few of our favourite soup recipes.
Don’t let the name Pumpkin Rice Porridge fool you! This is a delicious, flavour-filled soup made in Korea with a vegetable closer to an acorn or onion squash. You can use pumpkin – the delica variety is ideal – and onion or butternut squash work well too. The recipe is from Our Korean Kitchen by Jordan Bourke and Rejino Pyo.
This Greens and Grains soup is taken from Magic Soup. This quick simple soup is made deliciously creamy by adding tahini. It tastes as good as it looks (see main pic above)!
This soup is simply called A Big Soup, and it’s big on everything (flavour, ingredients) EXCEPT calories. The recipe is taken from The Hairy Dieters Eat For Life and is only 157 calories per portion!
