A Foodie’s Day Out: Cookery Demos at the Wealden Midsummer Fair


The Wealden Times hosted their mid-summer fair last Saturday at Hole Park in Rolvenden, on the Kent/ East Sussex border, and two of our brilliant chefs led the demonstrations.

First up, Nina Parker launched Nina St Tropez, the perfect way to bring the seaside and glamour to our kitchens. Nina cooked ‘Cedric’s Salmon’, a healthy, summery pan-fried and oven-cooked salmon with basil and lots of lemon on a bed of green beans, mangetout and fresh pees with a dressing to dream about.

Then Dhruv Baker gave the audience a sneak preview to his beautiful forthcoming cookbook, Spice, published in July.   Dhruv demonstrated how to cook pigeon and duck breast to perfection, presented on a bed of spiced pea puree.

A lovely way to spend a sunny weekend and plenty of inspiration to try out some new dishes this summer!
