September has arrived and it’s back to school for many. Inspiration for packed lunches can be hard to find so here are a few suggestions from us:
Jennifer Irvine’s recipe for New Potato and Cream Cheese Frittata is not only healthy (taken from her The Balance Diet cookbook) but can easily be kept cold in a lunchbox for a filling but nutritious lunch.
For little ones with a slightly more developed palate, this Vietnamese Chicken Noodle Salad is delicious. The chilli heat can be reduced if required, but it’s a yummy, fragrant salad that is fantastic cold. The recipe is taken from Kate Harrison’s Ultimate 5:2 Diet Recipe Book.
